The biggest difference is what's not in it. Belgian chocolate is traditionally made with pure cocoa butter — not cheaper vegetable-fat substitutes. Cocoa butter melts right around body temperature, which is why good Belgian chocolate seems to dissolve on your tongue instead of chewing like wax.
Ground finer, so it feels smoother
Belgian chocolate makers are known for grinding their chocolate to an exceptionally fine texture. The particles are small enough that your tongue can't detect any grit at all — just a smooth, creamy melt. Combine that with slow mixing (a process called conching) and you get the signature silkiness Belgian chocolate is famous for.
A craft measured in generations
